Meal Planning + Creative Snacks are Key!
- In our family, snacks for lunches and weekends are a must. I spend a few hours every Sunday making things like granola bites, corn tortilla "chips," graham cracker ice cream sandwiches, etc. Stuff that's easily purchased in bulk and made into something else with little effort. I feel like commercially packaged snacks just have too much "stuff" in them. Then, at dinner Sunday night, we sit down as a family and come up with a menu for the week. There are three of us that can chime in so we each get to pick two days per week; the final day is left open (it can be any day) and we are all allowed to make whatever we want that night, but we still have to eat together. With a menu for the week in hand, it's much easier to go grocery shopping and not overspend. And to get ideas for meals, we use old issues of Cooking Light or recipes out of my grandmother's cookbook. I find this also makes meal time more harmonious because everyone has been able to weigh in on what they want for the week.
